A few days ago I had a sudden and unprecedented craving for scones. Going vegan has been a real adventure in cooking (baking in particular) so I set out to find the perfect recipe, preferably one that wouldn't require a trip to the store.
The first recipe I tried was a disaster, the result more like a big pancake than anything else. The second attempt was inspired by one of my go-to recipe websites, The Minimalist Baker, and though the recipe did require the dreaded grocery shop, it was well worth it. These scones are everything you expect in a scone and better...since they're deliciously vegan.
This is my first post so I'm a bit self-consciously aware of what I should have done differently in the prepping process – I should have taken way more photos along the way. Alas, you’ll have to follow my written directions without the visual reinforcement. You can do it, I totally believe in you!
